Whole Wheat Cornbread   Serves 6   4 tablespoons (1/2 stick) salted butter, plus more for the baking dish 2/3 cup plus 1 tablespoon whole wheat flour ½ cup organic fine cornmeal 1 tablespoon baking powder, sifted ¼ teaspoon salt 1 cup fresh, canned, or thawed frozen corn kernels ½ cup heavy cream 3 tablespoons honey or maple syrup 2 large eggs ½ cup sour cream   Preheat the oven to 350°F. With butter, generously grease an 8 x 8-inch baking dish or 9-inch cast-iron skillet.   In a large bowl, mix together ⅔ cup of the whole wheat flour, the cornmeal, baking powder, and salt.   In a small pan, melt the butter over medium heat. Add the remaining 1 tablespoon whole wheat flour and whisk until the roux begins to smell nutty and has a nice light brown color, about 3 minutes. Add the corn and cream. Whisk until the mixture thickens; this should take only a couple of minutes. Mix in the honey and remove from the heat. Let cool slightly.   Add the creamed corn mixture, eggs, and sour cream to the bowl with the flour and stir the ingredients well to combine without overmixing.   Pour the batter into the prepared pan and bake for about 25 minutes, until a toothpick inserted into the center comes out clean.       Recipe Notes: You can also bake the bread in a loaf pan, but you’ll want to increase the baking time by 15 to 20 minutes.   For a little added sweetness, a homemade honey or maple butter is the perfect topping for this cornbread. A word to the wise: It’s a good idea to double this recipe, because you’ll surely want to consume one fresh out of the oven, leaving nothing to serve later with the chili.

What a wonderful cookbook to add to my collection! I have already read it cover to cover. Great writing by both Eivin and Eve- I could totally hear their distinct voices in what I was reading, and found myself chuckling often as I read. The pictures of the family are so charming- finding Findley right at the beginning completely set the tone for the book and it was so heartwarming to see. I love the tone of the homesteading advice- completely informative and "this is how we do it" without being preachy or proclaiming that their way is the only way. Eve suggests right at the beginning that one should feel free to play with the recipes for available ingredients, and then carries that throughout the book. I've already made the Blueberry Muffins and the Chicken and Barley Soup, and both are winners. This book will be used often- as a recipe book and as inspiration.

I have never even heard of this show or this couple, but have been looking for cookbooks with whole recipes with the idea of self sustaining in mind. Seeing the raving reviews, I purchased this book..and while the photography is breathtaking, the recipes are a bit eccentric. It looks to me as if most people who bought this book are fans of the show, and if that’s your thing then go for it. However, the regional Alaskan foraged recipes don’t do me, in Texas, any good..which is the reason behind my rating. If you love the show and could really care less about the recipes, then consider this a five star book. However, if you are looking for an actual COOKbook with simple, everyday recipes and not a “day in the life” book, look elsewhere.

I wish we could be homesteaders but being military and moving every otther year, sometimes every year, well it isn’t the cards right now, but it’s a retirement dream. We love their show and I saw some reviews about how if you didn’t like the show you wouldn’t like the cookbook. I sat false on that one. Eve writes this understanding that the average reader isn’t homesteading next door in Alaska. She takes the time in most of the recipes to put notes about substitutes if you can’t find a certain ingredient and explaining why certain ingredients are used whether it be their nutrition profile or what not. They do include wonderful little stories about their homesteading adventure which are a fun bonus, but the book itself just has some many delicious wholesome real food recipes. You don’t have to be a homesteader growing your own food - I want a garden so badly and at some duty stations we have been able to have small ones. Right now it isn’t realistic because we moved middle of the summer and leave early summer next year. But they encourage the reader to be a homesteader in whatever capacity you can or to just be more conscious of where your food is coming from and express a little of why they feel that’s important. Eve encouraged me to try my hand at capturing and starting my own sourdough! I can’t say my first try was faultless but my 4 year old and I made her sourdough waffles with our starter (that she helped with daily and was excited about) and she gobble them up!! My daughter has seen some of their show, she does everything with me. Kids are so much more observant that we realize sometimes. I didn’t realize how much she was becoming aware of my desire to know where our food was coming from until she asked me if I captured that chicken I was prepping for dinner one night 😂 This book is a great challenge to me to keep up with my quest to keep more real food in my house, do what I can in our current circumstances to grow what I can and purchase more food that I know where it came from and meat that is humanly raised, to include my children in as much of it as possible so that they understand the importance. Thank you Eve and Eivin for sharing a little of your homestead with us!

Love the stories, photos and recipes. All the ingredients bring back memories from my grandparents farm in Michigan :)I'm looking forward to trying the dark chocolate cream pie and onion marmalade!

Finally! A healthy cookbook with real food that doesn't shy away from dairy or good fats. Bring on the bone broth and the roasted rolt vegetables. Eivin and Eve are my favorites on Alaska: The Last Frontier, but this would be a good cookbook for anyone who wants to dip their toes (and spoons) into homesteading or good, wholesome home cooking. And it's beautiful to display or flip through.

This cookbook rocks! My wife bought this book on preorder I believe and since has made around a dozen of the recipes out of it. Salmon burgers, honey sage venison sausage, eivins popcorn for dinner, and some amazingly easy and tasty pie crust. If you want a good cookbook with great, healthy recipes I would suggest this one.

This book. I just loved it, you will too!!The photographs are so beautiful, the stories are so lovely and the recipes are realistic and easy to make. It's more than just a cookbook!! I've read it front to back a dozen times since I got it and HOPE! they make another book or cookbook soon.I appreciate their use of fresh ingredients. I'd love to know more about their life, family, and homestead.

I purchased this for my parents. They love the show and the couple. The book is more than just recipes; it also includes anecdote and stories from their unique lifestyle. Eve and Eivin are charming and they remind people to appreciate their resources and food. You do not need to have seen the show to appreciate this book.
